Wanchope struck first, finishing following a Frank Lampard assist to give the Irons a 13th minute lead.
Although Emile Heskey hit back at the midpoint of the opening period, West Ham were undeterred, and Wanchope's second of the game sent them in at half-time happy.
The Costa Rican then turned provider for his near-namesake, as Di Canio made the points safe on the hour.
Victory took the Irons to eighth in the Premier League, and they would end the campaign one position lower, with 55 points.
